Violet Salad and Dressing

Okay it’s Mother’s Day this coming Sunday and what are some of the grape things mothers do?  Well, we cook!  And for those of us who are grape moms, here’s a recipe I found for Violet Mint Salad with Creamy Violet Dressing, care of Prodigal Gardens’ Violet Recipes!

Violet Mint salad

Ingredients

The main ingredients are 2 cups of violet leaves, cut into thin ribbons and 1 cup of Mint leaves, chopped fine or minced in a food processor. Other ingredients are:
1 cup violet blossoms
1 carrot grated
1 cup walnuts
1 cup dried fruit (choice of raisins, dates, craisins, currants, apricot)

Preparation

Toss everything together and top with your favorite dressing. One can try this salad with creamy violet dressing for a total violet experience.

Creamy violet dressing

Ingredients

2 cups fresh Violet greens
1 Tbsp lemon juice or vinegar
1 tsp honey
½ cup olive oil
½ cup yogurt
1 garlic clove
Dash of pepper
¼ tsp salt

Preparations

1.) All the ingredients except yogurt are blended thoroughly in a blender or food processor.
2.) Yogurt is then added and blended gently until smooth.
This dressing can also be made with chickweed, watercress, lambsquarters or any other mild, tender green. Also to be remembered is that this dressing is an all purpose creamy green dressing.
Violet leaves and flowers make for great combinations that ensure finely tasting salads. To savor these salads is guaranteed to be a fine treat not only to your taste buds but to your overall health.
